Yesterday I needed something pretty. A little pick me up to lift me from the baby blues. So when I saw this post from MKMP featuring these frozen strawberry vanilla yogurt bites, I got all inspired. And since Mr Banya picked up 5 punnets of strawberries for $10 earlier in the week, it seemed the stars were aligned…
These were so easy, really quick and super yummy. First, wash & trim the strawberries, and roughly cut into chunks to fit your mould.
Then dollop over some yoghurt, trying to get as much between the strawberry chunks as possible.
(I used Harris Farm yoghurt here because that’s what we had in the fridge. Gippsland yoghurt is really nice as well. If I’m following my diet lifelong healthy eating habits, then I would use Yoplait Forme, as this has a much lower sugar content. But I’m allowing myself a one month post-birth grace period before I start watching what I eat again).
Then cover with clingwrap, and pop in the freezer for a couple of hours. Pop them out of the mould, and trim the edges with a pairing knife, and you’re done!

Mr Banya asked for them with cream next time, and is so keen that he has already gone out and bought some! He doesn’t get excited over desserts very often, so I’m taking this as a sign that these are a winner. 🙂
